Healthy Birthday Cupcakes

So it was my new friend Eric's birthday and he likes to eat healthy (and has a mysteriously love for bran muffins) so I experimented and ended up with very delicious, healthy cupcakes that everyone enjoyed.

I got the recipe from a blog called So Good and Tasty

Strawberry and Honey Bran Muffins
about 15 muffins

1 cup wheat bran
1 1/2 cups whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 cup toasted almonds or walnuts, finely chopped (optional)
1 cup milk (soy, rice, almond, or dairy)
1/2 cup honey
3/4 cup applesauce
2 tablespoons oil
2 eggs, beaten
1 1/2 cups strawberries, chopped

Preheat oven to 400˚F. Grease or paper line muffin tin. 

In a large bowl, combine wheat bran, flour, baking powder, and baking soda. Stir in chopped nuts if using.

In a separate bowl, mix milk, honey, applesauce, oil, and eggs. Add the wet ingredients to the dry, and stir just until moistened. Fold in the strawberries.

Spoon the batter into prepared muffin tin, about 3/4 full. Bake for 15-20 minutes. 

I also added a "frosting" to make them more birthday-esque. I mixed a package of Neufchatel Cheese (the healthier version of cream cheese) with some honey (probably about 1/4 cup), a little bit of milk, and some (very) finely chopped strawberries (chopping them was superb stress release).

So I have tried very hard to blog in the past but with all of the blogging being about 'me', I just get so worn out. So I'm trying something new: a worship blog. It's an extension of just my everyday worship. I got the idea this morning. I woke up, showered, and then turned on some Jesus Culture music to get ready. I went to brush my teeth and was suddenly overcome with a heart to praise the name of Jesus. All of the sudden I realized that I was worshiping God while brushing my teeth. All of the sudden Colossians 3:17 became much more prevalent in my life. God started talking to me about what it means for my life to truly be centered around Him and to worship Him in EVERYTHING I do; what it means to ABIDE in Him. I had recently toyed with the idea of starting a cooking/crafting blog and then all of the sudden realized I could combine that with the new revelation of what God was speaking to my heart about worshiping Him in everything! So whether I've tried a new recipe or God's just talking to me, I want to just let my worship explode into a blog.
